Title: Let's talk ginger.
Post by: Rumbas on August 14, 2017, 08:06:24 AM
Well, because ginger is awesome.

I have experimented with ginger in a lot of ways as I can't get enough of it.

I've done a nice combo of fresh ginger and lots of lime juice in the blender and then through a sieve. In the fridge and you have a nice fresh drink.

The other day I found a ginger beer recipe:

1. Ground fresh ginger in a jar with equal amount of sugar.
2. Let is rest for 3-4 days until it ferments and starts producing gas.
3. Boil a nice huge chunk of ginger with 1L of water for 30 mins.
4. Put it through a sieve and mix in some sugar for taste and further fermentation.
5. Add another liter of water.
6. Let it sit on the kitchen counter for a few days to buble a bit more.
7. Pour in a bottle and keep in the fridge.

8. Mix ginger beer, dark rum and lime and knock yourself out on Dark & Stormy.

I've also done the sushi type ginger, but getting the taste and texture right is hard. Needs some work.

When I first saw the topic I thought it was going to be about hair!  ;)

I'm with you on the awesomeness of ginger - both eating and drinking. I'm really enjoying a particular ginger tea at the moment - https://www.pukkaherbs.com/teas-supplements/pukka-organic-teas/three-ginger/

>sushi type ginger

NOW you're talking! You know I'm seriously addicted to ginger --particularly pickled ginger in sushi bars. When Rumbas & I hit the sushi bars, we wipe out their pickled ginger supplies.  When we do Japanese, we order double ginger sauce (and keep it coming). Who needs that other sauce when there's ginger!

While in Orlando last year, I was in a mom & pop Korean restaurant late in the evening. The restaurant was attached to a Korean grocery store for local expats. They found out I was addicted to ginger and opened the store for me ...ginger items EVERYWHERE. Ginger candy; some so spicy it would make your eyes water.  Ginger tea. Prices were low but I still spent about $80 in there. Almost overdosed.  I'm going back this year. Have them locked in my gps.

Not a huge ginger fan at all. I like some fresh ginger in some marinades but no more than a tablespoon or so tops. And powdered ginger works in moderation as well. But overall if ginger disappeared from the planet I wouldn't really shed a tear.

My wife on the other hand loves pickled ginger with her sushi. RC, you and Rumbas can take her out to sushi sometime but call ahead and make sure they have ordered more ginger.

Here's a trick for your wife to get a cheap ginger high; go to a Chinese buffet that has a side bar of low-end sushi. Just make sure they have decent pickled ginger.  Pick through what sushi is worthwhile --it's going to be mostly rice but the California rolls are usually ok. LOAD your plate with pickled ginger, far more than it takes for the sushi you've chosen, then go over to the steamed vegetables and fake crabmeat sections of the buffet to get something good to carry the ginger.  Works for me! (But I gain about 4# of water weight after one of those forays.)

Good tip RC.

I'm also addicted to everything ginger. Especially these beauties:

The Korean store had a hard ginger candy that the owner said was too hot for her. I bought many bags of them.  BUT the real treat was bags of ginger "chips" with a thin sprinkling of sugar on them. These were moist & chewy slices of straight ginger.

South Carolina company. The red top is serious. "Our boldest flavor that tantalizes and tingles the taste buds, and goes down as smoothly as a firecracker exploding in your throat."

Blenheim + dark rum = the best dark and stormy. I'll have a couple bottles for you next time you visit, RC.

I'm not addicted to ginger but I do like ginger snap cookies.  I also buy "Canada Dry" ginger ale a lot.

>ginger snap cookies

They were my gateway. As a kid, those and ginger bread started me on a path to becoming a ginger junkie.

Go to Dollar General. Yes, THAT, Dollar General.  In the cookie section you'll find a sorta plain-ish brown bag of snaps. Cheap, like $1 for a good-size bag.  Some of the best you'll ever find.

Pro Tip: Ginger Snaps are great for long distance automobile trips.  They don't make you thirsty so you don't drink as many fluids and have to make more stops.

>Dollar General

I'm on it.  Coordinates locked in.  Warp speed plaid.

>Pro Tip

Good one. But I'll add that if you eat a whole bag of really good snaps, you might not be able to feel your tongue or back of your throat for an hour or two.

I'm assuming either my mom or dad were borderline ginger addicts. Most likely my dad.  As a household, we didn't have cake very often but *very* dense/rich, almost fudge-like gingerbread with a strong lemon sauce sounds gross. tastes great was one that showed up on occasion.  Lasted about 30 seconds.

When we were in VN I bought some ginger candy on Mark's recommendation, man are they good.

This thread was running my ginger craving crazy, so I stopped by Dollar General ...they've "upscaled" the snaps (and the price: $1.30 for a bag). As expected, the ginger spiciness was cut back and they're just average or B-grade now. ...I ate the whole bag just to be sure.

LOL. Good boy.

>Good boy

I'm below my target weight, so I didn't worry about the carbs.  One thing these snaps got right is they baked them until they were very dark and rock-hard. I don't like soft cookies.  BUT, eating a whole bag of rocks wasn't the best idea for digestion. My stomach growled and churned all night.

Will that stop me from eating another bag next time I have a craving?  No. Addictions don't care about your indigestion, hhh.

Lovely stuff, i include it in my juice every morning (all organic) :

Apple.
Pear.
15g Ginger root.
15g Turmeric root (same family as Ginger).
2 sticks of celery (or 1 if the flavour is too strong)
Half a lime.
Lemon equal in size to the half lime.
200g Carrots.
Slice of water melon, including the rind (full of good stuff too)
A beetroot (peeled).

It's really tasty but 2 sticks of celery can spoil what's otherwise a lovely, sweet drink.

Yeah, ginger is listed as "promising" for nausea & vomiting on the snake oil chart.  It's a good thing you put it in your juice, hhh.

Ginger ale was the best thing I ever found for settling morning sickness.

Just for the record I always preferred Mary Ann over Ginger.   ;D

I picked up a brown bag of off brand ginger snaps at the store.  Will try soon.

Also bought Zevia ginger ale and their root beer which says it has some ginger in it.  Ginger is seems good for masking the taste of Stevia sweetener.

I, too, love ginger root.  And pickled ginger.

It's one of the few "spicy" items I love.  (As well as Wasabi.)

I'm gonna try that ginger beer recipe.

lol :)

It's a proven antioxidant and antiinflammatory :P

But, IIRC, antioxidants aren't proven to be beneficial.

>antioxidant

But, IIRC, antioxidants aren't proven to be beneficial.

Because not enough research has been done, to quote Harvard school of public health :

"Free radicals contribute to chronic diseases from cancer to heart disease and Alzheimer’s disease to vision loss. This doesn’t automatically mean that substances with antioxidant properties will fix the problem, especially not when they are taken out of their natural context. The studies so far are inconclusive, but generally don’t provide strong evidence that antioxidant supplements have a substantial impact on disease. But keep in mind that most of the trials conducted up to now have had fundamental limitations due to their relatively short duration and having been conducted in persons with existing disease. That a benefit of beta-carotene on cognitive function was seen in the Physicians’ Health Follow-up Study only after 18 years of follow-up is sobering, since no other trial has continued for so long. At the same time, abundant evidence suggests that eating whole fruits, vegetables, and whole grains—all rich in networks of antioxidants and their helper molecules—provides protection against many of these scourges of aging."

Right. Like I said, unproven. hhh
