I can do that.

How hard or easy is this thing to clean?

How hard or easy is this thing to clean?

Most rice makers are very easy to clean. My Chinese-American mother-in-law makes me cook the rice because she has literally never in her life made rice without a ricemaker. They are that central to modern Asian culture. She does insist on one with steel innards instead of aluminum. In this case "Nonstick inner cooking pot removes for quick cleanup in the dishwasher"

The amazing thing about that page is that it has a feature I've never seen on Amazon - comparison shopping built right in (scroll down to the "Compare to Similar Rice Cookers" rubric)

Extremely easy.  It has some of the slickest teflon I've ever felt ...almost feels oily to the touch.

I ain't cooking rice.  How about blue cheese meatloaf?

Also, other cookers will probably work but I've only used this one.  And, this one is gasketed, so it's really a vented, ultra-low psi pressure cooker (with a searing capability).

Rice cookers are great for DIY sous-vide frolics...

I should add that up until 4 or 5 years ago, I had never cooked except grilling --which I dislike. Too much tending.

>clean

I forgot to mention that there is a thin, aluminum, teflon-coated pot as a liner which easily lifts out to wash.  BUT, since my system does not require attendance/attention and can be addressed whenever it's convenient, I tend to cook in batches and not wash the pot in between.

>sous vide

It was discovering sous vide in my quest for home-cooked RARE beef that originally got me into cooking.  I did sous vide for about 4 years, cooking almost all meals except breakfast. It was sous vide that showed me that cooking could be done almost incidentally --without having to worry about cooking times. You can literally leave a rare beef roast in the water for 3 days and its still rare whenever you decide to take it out.

Sous vide was an important phase in my trek toward a Jetson's meal system.  It showed me that we could [1] eliminate cleanup of pots & pans, and that meals could be [2] cooked without regard to length of cooking time.  Those 2 factors go a LONG way in getting to hassle-free eating.  The third step was the evolution of what I call "Mad-Scientist Cooking" --zero recipes.

Oh good, the rabbit hole.

Its sounding better all the time. I've got one of these ordered. I'm wondering how much different this is from a slow cooker?

Massively, massively different.  I'll cover the "firing sequence" later, maybe.

Where did all the sudden interest in sous vide come from?
I got a chance to much about with it a bit when I was training as a chef back around 1989 I think.  Good results, but then didn't hear of it again for decades.

Last couple of years it is all over the place again.  TV chefs?

Go pick up a cheap, non-digital crockpot from wallyworld ($15 last I noticed) and add this

Should work.  I've got one lying around here somewhere but haven't had need to wire it up yet.

In some big recipe site, as I recall. One guy started evangelizing and posting recipes. I think he's published a couple of books since.

I like sous vide and did it for a few years and my mad scientist methodology made it exponentially easier than conventional cooking.  But my laziness evolved and now I'd only do it for a large rare roast beef.  Everything else is done in the rice cooker.

RC introduced me to Sous Vide, and I use it 5-6 days a week now.  It's so efficient.  Drop dinner in the water, come back and eat... when I'm ready, not the food.

Less, yes, if you do like the recipe sites say. Waaaaay less if you go rogue like I did.  But, again, I took what I gleened from sous vide and applied that to the replicator and now it's truly a sidebar process.

Title: Re: RC's Replicator

I lost a lot of weight, started craving carbs, eventually I started brewing beer as a hobby and that pretty well ended the low carb diet.  Gained back all of what I lost but because of beer, had fun doing it.

Doing pretty well overall over time.

Being sick as a dog just for 4 days just put me under 93.5 kg - down from 114 kg at my highest 3,5 years ago. Strength-wise, going low carb is not ideal, but using the Carb Backloading protocol seems a good fit for me. Basically just eating your carbs - if any - at evening and especially not be fore training.

Nice job Rumbas.  Yeah, I know, low-carbing makes it hard to lift with intensity.  I haven't gotten very scientific about it like you, but I've upped my fruit a little and it seemed to help me in the gym.

This sounds ridiculous, but try the pancakes made out of crushed pork rinds. They taste like really good crepes or pastry.

Thanks for the idea, Rumbas.

>>carb-y

I didn't have any pork rinds or heavy cream, but I found some almond flour from my Atkins days. I tossed in a couple of eggs, cinnamon, nutmeg, and splenda. Hit "white rice" --worked!  Low carb, relatively low calorie, pancakes.

I found some quinoa flour from my Atkins days. 1/4 cup quinoa, 1/4 cup water, 1 egg, yeast, cinnamon, nutmeg, salt, and splenda. Hit "STEAM" --white rice setting was overcooking. Fast, 16 carbs, 200 calories. Pancake was large, about 10 inch diam x 1/2 inch thick.  This would work for carb cravings.

I may be late to the party here... but reading this it seems like RC, you have some interesting way of cooking, and 90% of it is done in a rice cooker?

The pancakes linked here look awesome. I need to try that. I have the same rice cooker in white that was linked here, so I am interested to learn more. I cook only rice in it, but would love to try it for other items.

>90% of it is done in a rice cooker?

Now up to 95-98% , I'd say. Though I've never looked online for recipes & such, one of my daughters says it has a significant following online.  As mentioned upstream, I'm just shooting from the hip when it comes to recipes, timing, etc., as in .........hmmm, what's in the fridge? That might be good with... with... with.. (stirs around in cabinets)... GINGER sauce!

Yeah, I had skimmed that article some time during my sous vide phase. It was most definitely on my mind when I started getting serious about the Replicator.  But it was the 'mad scientist' mode of experimental cooking that led us to try it.  I was doing all meats by sous vide but vegetables were just not getting hot enough. Louise was the one who got the idea of trying the rice cooker for vegetables.  Once I saw how well that worked I decided to try a slab of hamburger ---Bingo! I had the seared taste I'd been missing in sous vide.

In the barbecue community there are a lot of people going the Sous-vide-que route. Basically cook it sous-vide and then throw it on the smoker for 30 minutes or so to get the smoke into it. https://amazingribs.com/more-technique-and-science/more-cooking-science/sous-vide-que-marrying-grill-and-smoker-sous-vide

I have yet to go down that road but I would expect within the next year I will have a sous-vide unit of some sort.

Yeah, it's big with the thick steak boys, too.  They sv, then sear/blacken it.

For <$80, you can't go wrong with that unit I just posted.  I experimented with it all weekend.  Uses a existing pot. Dog simple.  Accurate.

I'm hooked on beef ribs lately.  Gonna try sv with them soon.

One of my favorites. Those giant plate ribs are probably my favorite thing to smoke. Basically like the best part of a brisket with a nice, convenient handle that cooks in half the time of a whole brisket.
