1/2 C - Rice Flour
1/2 C - White Corn Meal
1/3 C - Cider Vinegar (I now usually use Wells BBQ vinegar to spice it up.)
1/4 C - Water
1/4 C - Salsa
1 Egg (Optional, but increase Mayo to 1/3 C if no egg)
1/4 C - Mayonnaise (Dukes is my preference)
Rice Pot: Pour mixture in bottom of pot. Set to 'Steam' for 13 minutes, then put on 'Warm' for 1 hour.
Air Fryer: 340 degrees for 20-25 minutes in 8x8 silicone pan
Crockpot: Try setting it on low for 20 minutes, uncovered. Crockpots on low are usually around 170 degrees, so you'll have to watch the first batch.
I like mine damp --more like a spoonbread. Drier flatbreads make take a little longer time sitting on 'Warm' after browning.
Dang. That sounds good.
Thanks RC.
If you're of good 'ol Southern heritage, you might try the above batter on an electric griddle to make griddle cakes.

Sure!
