Remember 25th is Burns Night - in case any of you have forgotten how to address the haggis

Address To A Haggis:

Fair fa' your honest, sonsie face,
Great chieftain o' the puddin-race!

The groaning trencher there ye fill,

His knife see rustic Labour dight, - (here you stick the knife in)
An' cut you up wi' ready sleight,

Then, horn for horn,
they stretch an' strive:
Deil tak the hindmost! on they drive,
Till a' their weel-swall'd kytes belyve,

But mark the Rustic, haggis fed,
The trembling earth resounds his tread.
Clap in his walie nieve a blade,

An' legs an' arms, an' heads will sned,
Like taps o' thrissle.

Ye Pow'rs wha mak mankind your care,
And dish them out their bill o' fare,
Auld Scotland wants nae skinking ware
That jaups in luggies;
But, if ye wish her gratefu' prayer,
Gie her a haggis!

Then you toast the haggis with a single malt preferably.

Clootie Dumpling (a pudding prepared in a linen cloth or cloot) or Typsy Laird (a Scottish sherry trifle);

Haggis in Whisky Cream sauce for me, followed by a few glasses of Ardbeg.

The combination of Haggis and 'neeps and tatties' is a match made in heaven and the perfect example of the 'sum being greater than the parts'

Been to Edinburgh more than once with more than a few of the guys here.

RC, remember the haggis? We expected something a lot worse and actually enjoyed it.. and the whiskey too!

Nae Pics I'm afraid.  Did the first verse of the address but the kids thought I was a loony speaking all Jockabilly.

Tonight, keeping on the Scottish theme we are having chopped up bambi filet and with that we are having baked potatoes scooped out then refilled with haggis then neeps (turnip) and the mashed up potato insides on the top.

Costco does venison from Highland Game when in season - they've won loads of awards.  I was out there this morning and they had the full fillet at half price but had to be eaten or frozen by Saturday.  I cut it in quarters and sealed them in the hot pan with butter and we have 2 of them tonight and I'll freeze two for L8er - the full fillet was just over 1.7k
