But would you dare? Our five-star reviews are one of our greatest assets.

I suppose if you have strong local following and are in a big urban area where going viral might work as a strategy that works. Most of our customers are not repeats, so... I put all my energy into avoiding 4-star reviews, let alone 1-star.
