Wow, fascinating.  I find them delicious.

I heard that American crayfish were found in Scotland, and that they were an invasive species.

Yet, trapping and eating them is considered illegal.  Why wouldn't the government ENCOURAGE people to eat them?

I like anything that crawls sideways but crayfish are down the list a bit.  For one thing, they're damn small when you cook them and have a slight musky aftertaste. That said, I wouldn't turn down a big platter of them.

I stayed in a holiday house near the upper reaches on the thames.  The river is only a couplew of Metres wide at that point, but the crayfish are even up there.

You've got to soak them in fresh water for a day or two to get the mud out.
