I think maybe a square plunger to spread the load of the pressure and a square receptacle with drainage is the way, just like the first video i watched - doh!

Nearly complete, all thick birch ply now apart from the acrylic plunger, which i've stress-tested. It's extruded so nice and strong through it's long axis.
Support platform for bowl has steel plate to protect wood from jack-saddle.
Bowl and support platform have 45 degree hole for food-grade silicon tubing (which arrives tomorrow) to feed through to a jug.
There's also a steel plate to press down between the plunger and cheesecloth bag full of fruit/veg.
Will do first full test tomorrow.

Latest test results are in :

Fruit 1, steel pressing plate 0 !

Will need to make a birch pressing plate.
