tl;dr:
A lab-created sugar that is very stable and moisturizing started to get added to ice-cream in the 2000s.  Clostridium difficile seems to become a super-bug when it eats on this stuff in the get.  Twenty-nine thousand died from C diff in the US alone.

There have been many examples of the ingredients in manufactured food, often touted as healthy, that turn out to be toxic later.  Eating things that use to be alive, things your great-grandmother would recognize, avoids most of this.
