Write snail mail letters.  At least in the US snail mail letters require a warrant from a real court and a real judge (as opposed to a secret court and a secret Patriot Act judge).  And the bonus is the US Postal Service has no clue where your letter is and only a vague notion how it gets to it's destination which makes it very hard for corporate spies or foreign spies to intercept.
